Last minute holiday ginger bread peanut butter chocolate chip cookies!

The longest blog title probably ever, but I promise these cookies are worth the mouthful. Literally.

I was in search for a yummy cookie to bake that wasn’t too unhealthy, had readily available ingredients, and packed a twinge of holiday spirit. After much searching, I found inspiration from Chocolate Covered Katie to make this delectable holiday goody. I made a few alterations to the recipe so here you are:

1/2 cup peanut butter ● 1/3 tsp powdered ginger ● 1/3 cup brown sugar ● 1 packet of stevia ● 3/4 tbsp baking soda ● 3 tbsp flour ● 4 tbsp mini dark chocolate chips ● 2 tbsp apple sauce ● 1 tsp vanilla extract

Stir the dry ingredients together. Mix the peanut butter, apple sauce, and vanilla extract together, then combine the two in a big mixing bowl.

Roll into balls, then toss them in the freezer for 10 minutes to harden. Preheat oven to 350 and bake for 8 minutes.
